Kadak means strong, and this chai keeps that promise. The leaves brew into a deep amber cup with a malty, slightly bitter edge that stands up to milk, sugar and a proper boil. As it simmers, a warm, toasty aroma fills the kitchen, the kind that gets people out of bed. Have it first thing in the morning, with an afternoon samosa, or on a rainy evening when a weak cup simply will not do. For one cup, simmer a heaped teaspoon in water for a minute, add milk, then let it bubble for two to three minutes. This 250g pack makes around 100 cups, enough to test the strength before you buy bigger.
